Job Summary:
-Perform Operational Sanitation Report everyday in respective shift. Document any
deficiencies and correct in a timely manner.
- Perform Pre-Operational Sanitation Report everyday in respective shift. Document any
deficiencies and correct in a timely manner.
-Perform HACCP Monitoring procedures as outlined in each Process Step of the HACCP
PLAN
- Ensure that the Critical Control Point (CCP) in every process category is kept under
control by maintaining the product below 44.6F as specified in the HACCP PLAN.
- Perform a HACCP PLAN corrective / preventive action in the event that a deviation
occurs. (see attachment)
- Perform HACCP PLAN Verification procedures (see attachment)
- Maintain the following HACCP records (Product temperature log for each process
category, Corrective action log, Thermometer Calibration Log). .(see attachment)
- Perform and record Scale Calibration.
- Perform and record X-ray machine calibration and operational inspection.
- Check and ensure personal hygiene practices, including no foreign objects enter to the
production area, for all employees.
- Check and record product weights (PORTION CONTROL AND FINISHED CASE
WEIGHT CHECKS)
- Check and record all invoice lot numbers in respective Receiving Logs for Fish,
Shellfish, Dry Ingredients (as spices or marinating ingredients) and verify that all
products and ingredients received have been applied a lot number for traceability
purposes.
- Verify all information and copy all sets of invoices lot numbers in respective Receiving
Logs for Beef Poultry, Fish, Shellfish, Dry Ingredients (as spices or marinating
ingredients) and verify that all products and ingredients received have been applied a lot
number for traceability purposes.
- Check and record sanitation and temperatures of all processing and storage rooms and
take corrective action when necessary
- Ensure that all products are labeled and identified throughout each process.
- Verify that the accurate packing code is applied to all products
- Check all production rooms and storage areas every 2 to 3hours. Initiate corrective
actions if needed whenever applicable.
-Check and ensure integrity of the back dry storage area.( including Spice room and
Packing materials storage room)
-Ensure proper Sanitation is maintained throughout the establishment.
- Enforce the established Sanitation Standard Operating Procedures (SSOP) and Good
Manufacturing Practices (GMP`s) and Performance Standards (SPS) Prerequisite
Programs and properly and accurately maintain the program records.( Attached, Please
Review and sign).
- Product Storage Areas: Ensure that storage areas are maintained clean and have the
area swept and washed as it is becomes necessary)
- Shipping and Receiving Areas, Ensure that shipping and receiving areas are maintained
clean and have the area swept and washed as it is becomes necessary)
- Packaging Materials storage areas: Make sure that all packaging materials are kept in a
dry clean storage room,
- Ensure that all packaging materials once transferred to any production room are kept in
the respective plastic pallet and are maintained clean and dry.
- Ensure that all allergens are kept segregated along with the utensils used only for
allergenic ingredients. Apply and enforce allergen control plan
- Ensure that the Lunch areas are kept clean, swept and mopped (make sure caution
signs are put in place), make sure trash cans are emptied in a timely manner and trash
disposed of accordingly).
- Ensure that the restrooms are maintained cleaned, with available sanitary paper and that
the hand wash sinks have hot water running, available germicidal hand soap, and that
the hot air hand dryers are working properly.
- Ensure that all parking lots are free of trash and debris, maintain all trash cans in good
condition and ensure they are emptied in a timely manner).
